WHY THIS RECIPE WORKS Tapas bar versions of this Spanish favorite showcase crispy twice-fried potato pieces served with a smoky, spicy tomato-based sauce. To create an ultracrispy crust without having to fry the potatoes twice, this version parboils them with baking soda, triggering a chain reaction that causes the pectin on the potatoes’ surface to release a layer of starch that develops into a thick crust when fried. Tossing the boiled potatoes with kosher salt roughs up their surfaces, creating nooks and crannies through which steam escapes and oil is trapped, making for even more substantial crunch. Adding mayonnaise to the garlicky tomato sauce gives it an aioli element. You can use bittersweet or hot smoked paprika in place of sweet (but taste the sauce before deciding how much cayenne to add). For efficiency, get the water boiling while you make the sauce, and get the oil heating while you parcook the potatoes. Use a Dutch oven that holds 6 quarts or more.
